Week 1 Menu...

Monday:
Breakfast--2 Whole wheat toast with PB, banana, 8 oz glass of milk (450 calories)
Snack--Spinach Smoothie (250 Calories)
Lunch--Whole Wheat Wrap with 1/2 piece of cheese, cup of lettuce, tomatoes, cucumbers, salsa, and apple slices (350 calories)
Snack--Fruit and Nut Bar from Good Earth, juice (300)
Dinner--Salad with L/O Salmon from last night and potatoes cut thin with ketchup (450 calories)

Total -- 1800 calories

K, I'm realizing that a menu this week is going to be impossible. I'm still at Matt's parents while our house is getting completed and I just don't want to go shopping and buy a bunch of food that I won't be using after this week (since we are going back to AZ this weekend). So instead, I will report what I ate for the day and then after I get settled back into a routine in AZ, I'll post menus.

What is your recipe for your spinach smoothie? I've never heard of that. I'd like to try it.

Julie-

In a blender add:

1 C. orange juice

2 C. fresh spinach (not the frozen kind)

1 C. fresh kale (cut out the thick center stem)

Blend until smooth, and runny, and green.


Then add: a banana

1/4 C. frozen raspberries

1/4 C. frozen blueberries

Blend again and then add ICE while blending!

It is delicious. You don't even taste the spinach. I got this recipe from a friend and I could drink one everyday. Tanner loves it too, which is a plus. I never thought I could get him to eat spinach.

Mary, last year, smoothies helped me overcome my addiction to sugar and helped me eliminate treats (since I was using the smoothies as a treat).
I am going to try this recipe out. Thanks for sharing.
smoothies are soooo my healthy thing to do!
